{Cupcake Sunday: Vanilla Chai Cupcakes}

Well don't I have a delicious treat for you today!!Vanilla Cupcakes with Chai Buttercream frosting.

Ingredients
CUPCAKES:
2 1/2 cup Flour
1 cup sugar
1/2 cup milk
1/2 cup butter
1/2 cup oil
3 large eggs
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract (not shown...sorry!)



FROSTING:
3 cups powdered sugar
1 cup butter
4 tbls Chai tea (I heat milk in a double boiler and steeped 2 chai tea bags)
- or- 2 tbls chai tea concentrate

 Pre-heat oven to 350*. For the cupcakes whisk all the dry ingredients together in a large bowl

In a small bowl mix the vanilla extract, milk, and oil

Using a handheld or stand mixer cream the sugar and butter for 3-4 minutes or until light and fluffy. When it is fluffy add eggs one at a time, mixing well after each egg is added. Then, alternate between adding the dry ingredients and wet ingredients. Start and end with the dry ingredients, when last dry ingredients are added mix until just combined and spoon into cupcakes paper in a muffin pan.

Cook 15-20 mins or until toothpick inserted comes out clean.

Cool cupcakes while you make the frosting (it will give you something to do to distract you from wanting to eat the cupcakes!) I just put them directly onto a cake plate, but a cooling rack works too.

Here is my ghetto double-boiler situation I got goin'. Haha say it again with me: Ghett-to-the-O!

With your handheld or stand mixer combine softened butter, sugar, and chai tea together until thickened.
When cupcakes are cool frost those puppies and add a little bit of cinnamon  for a flare or color on top.
